Today I have a simply delicious dish for you, I have used a couple of products from the “Feine Welt” range available at REWE Supermarkets (Germany), as I work for REWE and have just been supplied with samples of the new herbs and spices and was so enticed by them that I had to get creative. In addition to that, the fennel plants in my garden had regrown and I had two lovely fennel bulbs waiting in my fridge.
2 small fennel bulbs
150 g smoked salmon (e.g. REWE Feine Welt “Zartes Norwegen”)
3 tablespoons sour cream
lemon pepper (e.g. REWE Feine Welt “Zitronen Pfeffer”)
12 cherry tomatoes
italian herbs (e.g. REWE Feine Welt “Italiens Düfte”)
6 sheets of lasagna
1. Halve the tomatoes, place in a bowl and sprinkle with the italian herbs. Leave to marinade.
2. Thinly slice the fennel and fry with a little olive oil until nearly done. Add the salmon, sour cream and lemon pepper, stir and remove from heat.
3. Bring a large saucepan of water to boil. Meanwhile cook the marinated tomatoes in a frying pan with a little olive oil. Once the water is boiling add the lasagna sheets – be careful that they don’t stick together!
4. Once the pasta is done you can begin building your (cheats) lasagna. Spoon some of the fennel and salmon mix on you plate, place a few of the tomatoes on top and cover with a sheet of lasagna – repeat until you finish with the third layer of the pasta.
